Ingredients

  • 1 package (16 oz.) Bob Evans Original Roll Sausage
  • 2 apples, cored, and thinly sliced
  • 2 tbsp butter
  • 1/4 cup dried cranberries
  • 1/2 cup orange juice
  • 1 tsp. orange zest
  • 1 loaf (16 oz.) hearty white bread, cut into 1" slices
  • 3 cups whole milk
  • 6 eggs
  • 1/2 tsp. cinnamon
  • maple syrup

Directions

In large skillet over medium heat, crumble and cook sausage until browned. Drain. In same skillet, melt butter. Add apple slices and sauté until tender, about 5 minutes. Add cranberries, orange juice and zest, and simmer 3 minutes. Remove from heat and stir in sausage. Spray a 9 x 13” baking pan with cooking oil spray. Overlap bread slices in pan to fit. Spoon sausage and apple mixture on top and in between bread slices. In bowl, whisk milk, eggs and cinnamon until well blended. Pour over bread and sausage. Cover and refrigerate overnight. In the morning, preheat oven to 350F. Uncover pan and bake for 50 to 60 minutes or until browned and custard is set. Serve with maple syrup. * Can use either Bob Evans Maple Roll Sausage or Bob Evans Original Roll Sausage.
